Head Brewer – Dan Shaw
Much has been written about head brewer Dan Shaw elsewhere having worked for the Colosimo family for over ten years. However his herculean work ethic, passion for brewing and industry knowledge make him our trusty leader. Once instantly recognisable by his Viking style haircut he is now best identified by his various pop culture or DC universe tattoos. If you know comics and craft beer settle yourself in for a long conversation at a beer festival or down at the Brewery. Dan loves our Seis Hermanos Lager but as we have struggled to keep up with demand lately he has settled on his second favourite beer the New World Pilsner. When not drinking Australian Brewery, Dan loves Day of the Dead from our cousins across the ditch Garage Project.
Senior Brewer – Charlie Claridge
Charlie turned his back on the corporate world in 2016 and joined our brewing team just as we were expanding again. Originally having completed an engineering degree at UNSW he later finished his post grad degree in brewing at Ballarat University. Charlie recently became a first-time Dad and his calming influence around the tanks was sorely missed by the rest of the team as export orders came in thick and fast. Now back in the brew house he is often seen enjoying the delicious Into the Void Oatmeal stout. It is only a matter of time before Charlie whose favourite style of beer is a good porter convinces us to add another dark beer to our range.
Brewer – Tom Davies
For his tender years Tom has had a remarkable number of jobs in and around the brewing industry. An inner west stalwart Tom makes the trip out to Rouse Hill every day to join our brewing ranks. Very knowledgeable and passionate about the Australian craft beer scene Tom was part of the second cohort of certified Cicerones in Australia and is awaiting his results. Tom is also completing the inaugural cert III in Microbrewing at Tafe NSW. Keeping his finger on the pulse Tom can often be found holding up the bar at the Union Hotel in Newtown drinking a Berliner Weisse. When not drinking beers Tom likes to let fireworks off the harbour bridge.
Production Manager – Max Hammerle
Our former intern from Weihenstephan-Triesdorf university in Bavaria is now a full time sponsored employee bringing his precise brewing skills and enthusiasm to the team. He has yet to have the smile worn off his face despite some weeks running the canning line for five long days in a row. Living in the Eastern suburbs of Sydney Max now can combine his new favourite passion of going to the beach with enjoying craft beer on the sand (although now under the nose of Randwick council.) Using the freshest of New Zealand hops Max is all about our New World Pilsner and with late hop additions now available in the Reinheitsgebot (German Purity Law) he is still enjoying the vast array of local IPA’s.
